Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground beef
  • 1 yellow onion finely diced
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 jar 24-26 oz traditional pasta sauce
  • 3 cups water
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • 1 box 16 oz penne pasta
  • 1 cup ricotta cheese
  • 1 cup shredded Parmesan cheese

Instructions

  • Sauté the Beef: Turn on the Sauté function. Heat the olive oil, then add the ground beef, onion, garlic, salt, and black pepper. Cook until the beef is browned and crumbled. Turn off Sauté and drain excess grease if necessary.
  • Add the Sauce & Liquid: Pour in the pasta sauce and stir to combine. Add the water, basil, Italian seasoning, parsley, and additional salt. Stir well.
  • Layer the Pasta: Evenly spread the uncooked penne pasta on top. Do not stir—just press it down slightly so it’s covered with liquid.
  • Pressure Cook: Secure the lid, set the valve to Sealing, and cook on High Pressure for 5 minutes. Allow 10 minutes for the Instant Pot to come to pressure.
  • Natural Release: Let the Instant Pot naturally release for 5-10 minutes based on your preferred pasta texture:
  • 5 minutes for firmer pasta
  • 8 minutes for medium softness
  • 10 minutes for very soft pasta
  • Add Cheese & Stir: Perform a quick release, open the lid, and stir everything together. Mix in the ricotta and Parmesan until melted and well incorporated.
  • Serve: Enjoy hot, topped with extra Parmesan or fresh herbs if desired.

Notes

Flavor Adjustments: Add a pinch of red pepper flakes for a slight kick.
Liquid Choices: Water keeps the dish balanced, while broth can add extra depth but may increase saltiness.
Pasta Options: Use penne or a similar sturdy pasta for the best results.
Storage: Leftovers store well in the fridge for up to 4 days and reheat easily in the microwave.
