  • 1 pound 90% lean ground beef
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (9.25-ounce) bag corn chips (Doritos or Fritos)
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons canola oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat canola oil over medium heat. Sauté diced onion for about 5 minutes until softened, then add garlic and cook for another minute.
  3. Add ground beef to the skillet, browning it thoroughly while draining excess fat. Stir in taco seasoning.
  4. Mix in black beans and salsa; cook for an additional 2-3 minutes.
  5. In a greased 9×13-inch baking dish, layer half of the corn chips followed by half of the beef mixture and half of the cheese. Repeat layers.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
  7. Remove from oven and add desired toppings before serving.
