  • 12 cups low-sodium beef or vegetable broth
  • 5 cups green or red cabbage, thinly sliced
  • 3 large beets, peeled and cut into matchsticks
  • 4 large potatoes, peeled and cubed
  • 1 large onion, chopped
  • 3 medium carrots, chopped
  • 6 ounces low-sodium tomato paste
  • 2 tablespoons olive oil
  • Fresh dill or parsley for garnish

Instructions

  1. In a large pot, bring the broth and bay leaves to a boil.
  2. Add the cabbage; cover and cook on low heat for 20 minutes.
  3. In a separate pan, heat olive oil over medium heat; sauté onion and carrots until soft (about 5 minutes). Add beets and cook for another 3-4 minutes.
  4. Transfer the sautéed vegetables to the pot with cabbage. Add potatoes, tomato paste, and salt; simmer for an additional 20 minutes on low heat.
  5. Stir in vinegar, grated garlic, sugar, and black pepper. Let sit for 10 minutes before garnishing with fresh herbs.
