  • 180g sourdough discard
  • 10g salt
  • 60g olive oil

  3. Conduct the windowpane test: stretch a small dough piece; if it tears, knead more.
  4. Let the dough rise covered in a warm spot for about 40 minutes or until doubled.
  5. Punch down dough, shape into loaves, and let rise again in greased pans for another 30–60 minutes.
  6. Bake at 350°F for 35–40 minutes until golden brown and internal temperature reaches 190°F.
  7. Cool on a wire rack before slicing.
