Ingredients

INGREDIENTS:
• 1 lb boneless, skinless chicken breasts, diced
• 1 tbsp olive oil
• 1 packet taco seasoning
• 1 cup cooked rice (white or brown)
• 1 cup black beans, drained and rinsed
• 1 cup corn kernels (fresh, frozen, or canned)
• 1 cup diced tomatoes
• 1 avocado, sliced
• 1/2 cup shredded cheese (cheddar or Mexican blend)
• 1/4 cup sour cream
• 1/4 cup chopped cilantro
• 1 lime, cut into wedges
• Salt and pepper to taste


Instructions

1. Heat olive oil in a skillet over medium-high heat. Add diced chicken and cook until no longer pink.
2. Sprinkle taco seasoning over chicken, stir well, and cook for 2 more minutes. Remove from heat.
3. Assemble bowls by dividing rice, black beans, corn, and tomatoes among four bowls.
4. Top with seasoned chicken, avocado slices, shredded cheese, and a dollop of sour cream.
5. Garnish with chopped cilantro and serve with lime wedges. Season with salt and pepper.
