  • 2 1/2 pounds beef chuck roast
  • 4 cups beef broth
  • 1 cup dry red wine
  • 5 medium carrots
  • 1 pound baby Yukon gold potatoes
  • 2 cups diced yellow onion

Instructions

  1. Cut the beef into 1-inch cubes and season with garlic salt and pepper. Toss with flour.
  2. Sear the beef in olive oil until browned; transfer to a slow cooker.

  4. Combine all remaining ingredients in the slow cooker except peas and cornstarch slurry; cook on low for 7 ½ – 8 hours or high for 3 ½ – 4 hours.
  5. In the last 15 minutes, stir in frozen peas.
  6. For a thicker gravy, mix cornstarch with cold water and whisk into the stew before serving.
