  • 1 pound large shrimp, peeled and deveined
  • 8 small corn or flour tortillas
  • ½ small red or green cabbage, shredded
  • 1 avocado, sliced
  • ¼ cup plain Greek yogurt (or sour cream + mayonnaise)
  • 2 tablespoons fresh lime juice
  • ½ teaspoon sriracha sauce (or to taste)
  • ½ teaspoon garlic powder
  • ⅛ teaspoon smoked paprika
  • Pinch of salt
  • 1 tablespoon olive oil
  • ¼ cup fresh cilantro, chopped
  • ¼ cup Cotija cheese, crumbled

Instructions

  1. In a bowl, mix Greek yogurt, lime juice, sriracha, garlic powder, smoked paprika, and salt for the sauce. Thin with water if necessary.
  2. Pat shrimp dry; season with smoked paprika, garlic powder, oregano, onion powder, salt, and pepper.
  3. Heat olive oil in a nonstick skillet over medium heat; cook shrimp for about 2 minutes per side until pink.
  4. Warm tortillas in a skillet or microwave.
  5. Assemble tacos by layering cabbage, avocado slices, cooked shrimp, taco sauce, cilantro, and Cotija cheese.
