  • 1 pound jumbo shrimp, peeled and deveined
  • 12 ounces lump crab meat
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1/4 cup quality dry sherry
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon white pepper
  • Salt to taste

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Add onion and celery; cook until softened (about 5 minutes).
  2. Stir in minced garlic and cook for an additional minute.
  3. Add flour, stirring constantly for 2 minutes to form a roux.
  4. Gradually whisk in warmed milk and seafood stock, ensuring a smooth mixture.
  5. Mix in tomato paste, bay leaves, and Old Bay seasoning; simmer for 5 minutes.
  6. Stir in heavy cream; simmer until slightly thickened (about 5 minutes).
  7. Add shrimp; cook until just pink (3–4 minutes).
  8. Gently fold in crab meat and sherry; heat through for another 2 minutes.
  9. Remove bay leaves; season to taste before serving hot.
