  • 2 cups mini pretzels (roughly broken)
  • 6 tablespoons unsalted butter (melted)
  • 3/4 cup granulated sugar (divided)
  • 12 ounces cream cheese (room temperature)
  • 1 can (20 ounces) crushed pineapple in juice (drained)
  • 16 ounces whipped topping
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine broken pretzels, melted butter, and 1/4 cup sugar. Mix well and spread evenly on the baking sheet.
  3. Bake for 8-10 minutes until fragrant and lightly golden. Cool completely on the sheet for about 30 minutes.
  4. In a stand mixer or using a hand mixer, whip the cream cheese until light and fluffy. Gradually add in the remaining sugar and vanilla extract if desired; beat until smooth.
  5. Drain crushed pineapple thoroughly using a fine-mesh strainer and fold into the cream cheese mixture.
  6. Gently fold in whipped topping in three additions until combined.
  7. Refrigerate for at least 2 hours before serving to allow flavors to meld.
  8. Just before serving, fold in some cooled pretzel mixture and reserve some for topping.
