Peanut Butter Granola Energy Bites — No Bake!

Ingredients

1 cup rolled oats
1/2 cup peanut butter (natural or creamy)
1/4 cup honey or maple syrup
1/3 cup mini chocolate chips
1/4 cup ground flaxseed or chia seeds
1 teaspoon vanilla extract
Pinch of sea salt

Instructions

In a medium mixing bowl, combine the rolled oats, ground flaxseed or chia seeds, and sea salt.
Add in the peanut butter, honey or maple syrup, and vanilla extract.
Mix well until everything is fully combined.
Fold in the mini chocolate chips.
Chill the mixture in the refrigerator for 20–30 minutes to firm up.
Once chilled, scoop out tablespoon-sized portions and roll into balls.
Store in an airtight container in the fridge for up to one week.
