  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 6 cups Sugar (divided)
  • 1/4 teaspoon Baking Soda
  • 1 1/2 cups Walnuts or Pecans (chopped)
  • 1 teaspoon Vanilla Extract

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes, stirring frequently.
  3. In a large saucepan, combine remaining 4 cups of sugar and heavy cream; simmer on low heat.
  4. Once the first batch of sugar has melted, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium until the mixture reaches 244°F (softball stage).
  6. Remove from heat, stir in baking soda, butter, and vanilla extract until smooth.
  7. Let the mixture rest for about 20 minutes before gently folding in chopped nuts.
  8. Transfer to the greased baking dish and allow to cool for 1-2 hours or overnight before slicing into squares.
