- 4 cups Granny Smith apples, peeled and cubed
- 1/2 cup old-fashioned oats
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp ground cinnamon
- 2 tsp baking soda
- 3/4 cup chopped pecans (divided)
- Powdered sugar and milk (for glaze)
Instructions
- Preheat oven to 375°F.
- Toss cubed apples with lemon juice in a bowl; set aside.
- In another bowl, combine oats, flour, baking soda, and cinnamon.
- Cream butter and sugar together until fluffy; add eggs one at a time along with vanilla extract.
- Gradually mix in dry ingredients followed by apple juice or water; fold in apples and half the pecans.
- Pour mixture into a greased baking pan; top with remaining pecans.
- Bake for 25–30 minutes until golden brown; cool slightly before drizzling glaze made from powdered sugar and milk.
