Ingredients

  • 4 cups Granny Smith apples, peeled and cubed
  • 1/2 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp ground cinnamon
  • 2 tsp baking soda
  • 3/4 cup chopped pecans (divided)
  • Powdered sugar and milk (for glaze)

Instructions

  1. Preheat oven to 375°F.
  2. Toss cubed apples with lemon juice in a bowl; set aside.
  3. In another bowl, combine oats, flour, baking soda, and cinnamon.
  4. Cream butter and sugar together until fluffy; add eggs one at a time along with vanilla extract.
  5. Gradually mix in dry ingredients followed by apple juice or water; fold in apples and half the pecans.
  6. Pour mixture into a greased baking pan; top with remaining pecans.
  7. Bake for 25–30 minutes until golden brown; cool slightly before drizzling glaze made from powdered sugar and milk.
