  • ¼ cup honey or maple syrup

  • ½ tsp vanilla extract

  • Pinch of salt

For the Filling:

  • ½ cup peanut butter

  • 2 tbsp honey or maple syrup (optional, for sweeter filling)


Instructions

Step 1: Make the Cookie Base

  1. In a mixing bowl, combine oats, peanut butter, honey, vanilla, and salt.

  2. Mix until well combined. The mixture should be sticky and hold together.

  3. Scoop out small portions and shape into flat, round cookies on a parchment-lined tray.

Step 2: Prepare the Filling

  1. Mix peanut butter and honey (if using) until smooth.

  2. Spread a generous tablespoon on one cookie.

Step 3: Assemble the Sandwiches

  1. Place another cookie on top, pressing gently.

  2. Repeat until all cookies are paired.

  3. Chill 15–20 minutes for firmer sandwiches.
