  • ½ cup evaporated milk
  • 2 cups brown sugar
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups shredded coconut
  • 1 tsp flaked sea salt
  • ½ cup corn syrup
  • ½ cup unsalted butter

Instructions

  1. In a large saucepan, combine evaporated milk, brown sugar, corn syrup, granulated sugar, and butter. Stir over medium heat until melted and smooth.
  2. Boil the mixture for about 3 minutes until it reaches 235°F (soft ball stage).
  3. Remove from heat and stir in vanilla extract.
  4. Add chopped pecans and shredded coconut; mix until well combined.
  5. Allow to cool slightly before dropping spoonfuls onto a parchment-lined baking tray.
  6. Sprinkle flaked sea salt on top of each cookie before they cool completely.
