  • 8 cups chicken or vegetable broth
  • 3 teaspoons fresh ginger
  • 8 ounces mushrooms, sliced
  • 5 dried wood ear mushrooms, soaked
  • 8 ounces bamboo shoots
  • 8 ounces firm tofu, cubed
  • 4 tablespoons rice vinegar
  • 1½ tablespoons red wine vinegar
  • ¼ cup soy sauce
  • 2 tablespoons chili garlic sauce
  • 1½ teaspoons sesame oil
  • 1 teaspoon white pepper
  • 4 tablespoons cornstarch
  • 4 tablespoons water
  • 2 eggs, whisked
  • 3 green onions, sliced
  • Crispy chow mein noodles for garnish

Instructions

  1. In a large pot, combine 8 cups of chicken or vegetable broth and 3 teaspoons of fresh ginger. Bring to a boil over medium-high heat for 6-8 minutes.
  2. Add 8 ounces of cubed firm tofu and 8 ounces of bamboo shoots; stir gently.
  3. Mix 4 tablespoons of cornstarch with 4 tablespoons of water until smooth; gradually stir this into the soup and simmer for another 1-2 minutes until slightly thickened.
  4. Slowly pour in 2 whisked eggs while stirring gently to create ribbons; let set for one minute.
  5. Garnish with sliced green onions and crispy chow mein noodles before serving hot.
