Ingredients

Scale
  • 4 large potatoes (peeled and diced)
  • 3 garlic cloves (minced)
  • 2 thick bacon strips (cut into pieces)
  • 2 tablespoons honey
  • Olive oil (for roasting)
  • Salt and cracked black pepper

Instructions

  1. Boil the diced potatoes in salted water for about 8 minutes until just tender. Drain well.
  2. Preheat your oven to 400°F (200°C) with a lightly oiled baking sheet inside.
  3. Spread the drained potatoes on the hot baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 30 minutes, flipping halfway through.
  4. While the potatoes roast, cook bacon in a skillet over medium heat until crispy. Add minced garlic and stir for another minute before mixing in honey. Remove from heat.
  5. After the initial roasting, pour the honey-bacon mixture over the potatoes, toss to coat evenly, and roast for an additional 10–15 minutes until caramelized and crispy.
  6. Serve warm, garnished with chopped parsley.
