Ingredients
12 oz penne pasta
2 tbsp olive oil
1 lb chicken breast, diced
1 packet Hidden Valley Ranch seasoning mix
1 cup heavy cream
1/2 cup chicken broth
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Cook pasta according to package instructions. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Cook chicken until browned and cooked through.
3. Stir in ranch seasoning, heavy cream, and chicken broth. Simmer for 5 minutes.
4. Add cheddar and Parmesan cheese, stirring until melted and smooth.
5. Toss in cooked pasta and coat with the sauce.
6. Garnish with parsley and serve warm.
Notes
Save some pasta water to loosen sauce if needed.
Substitute with gluten-free pasta or rotisserie chicken.
Add-ins like bacon or broccoli work well too.
