- 12 large eggs
- 32 ounces small curd cottage cheese
- 16 ounces shredded Colby Jack cheese
- 1 pound cooked bacon
- ¾ cup all-purpose flour (or gluten-free substitute)
- 10 ounces frozen chopped spinach
- 1 cup diced red bell pepper
- ½ cup minced yellow onion
Instructions
- Preheat the oven to 350°F and lightly spray a 9×13-inch baking pan with nonstick spray.
- Cook bacon until crispy, then chop it into pieces.
