Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 5 cups beef broth
  • 15 ounces diced tomatoes with juice
  • 8 ounces tomato sauce
  • 2 teaspoons Worcestershire sauce
  • 3 cups frozen mixed vegetables (corn, green beans, carrots)
  • Salt and pepper to taste

Instructions

  1. In a large soup pot over medium heat, warm the olive oil. Add the ground beef along with the diced onion, celery, and garlic. Cook until the beef is thoroughly browned.
  2. Stir in the diced potatoes and pour in the beef broth. Add the diced tomatoes (with juice), tomato sauce, Worcestershire sauce, salt, and pepper. Bring to a simmer for about 10 minutes.
  3. Add the frozen mixed vegetables and let simmer for an additional 15-20 minutes until potatoes are tender.
  4. Taste and adjust seasonings if necessary before serving hot.
