  • lbs boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 24 cloves garlic, minced
  • 1¼ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • 23 tablespoons acid (lemon juice or vinegar)

Instructions

  1. Pound chicken breasts to an even ½-inch thickness using a meat mallet.
  2. In a zip-top bag, combine marinade ingredients and add the chicken; seal and massage to coat. Marinate for at least 30 minutes or up to 12 hours.
  3. Preheat grill to high heat (475°F). Clean and oil the grates.
  4. Grill chicken for about 4–5 minutes on one side until it releases easily; flip and cook for another 4–8 minutes until reaching an internal temperature of 155–160°F (it will rise to 165°F while resting).
  5. Allow chicken to rest for at least 5 minutes before slicing and serving.
