  • 2 chicken breasts (about 12 oz/350g)
  • 6 cups chicken stock
  • ¾ cup orzo pasta
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 23 celery stalks, diced
  • 2 egg yolks
  • Juice of 1 lemon
  • Fresh dill for garnish

Instructions

  1. In a large pot over medium heat, sauté diced onion, carrot, and celery in olive oil for about 8-10 minutes until softened.
  2. Add minced garlic and cook for another minute. Then stir in bay leaves, chicken breasts, and chicken stock.
  3. Bring to a boil, then reduce heat and simmer covered for 15 minutes. Remove chicken breasts and bay leaves.
  4. Add orzo to the pot and cook for about 10 minutes until tender while shredding the chicken into bite-sized pieces.
  5. Whisk together egg yolks and lemon juice in a bowl. Temper with hot broth before pouring back into the pot.
  6. Cook on low heat for an additional 5 minutes. Stir in fresh dill and season with salt and pepper to taste.
