Naturally sweet and satisfying coconut date energy squares made with just a few pantry staples. Perfect for healthy snacking.
Ingredients
1 cup pitted Medjool dates
1 cup unsweetened shredded coconut (plus extra for topping)
½ cup raw almonds or cashews
1 tsp vanilla extract
Pinch of sea salt
Instructions
1. Place dates, nuts, vanilla, and salt in a food processor.
2. Pulse until mixture begins to stick together.
3. Add shredded coconut and pulse until just combined.
4. Press mixture into a lined pan evenly.
5. Sprinkle extra coconut on top and refrigerate for 1 hour before slicing.
Notes
You can store these in the fridge for up to 2 weeks or freeze for 3 months.
Optional add-ins: protein powder, cinnamon, chia seeds, or cocoa nibs.
