  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 3 cups fresh or frozen blueberries
  • 1/2 cup sugar (for topping)
  • 1/3 cup cake flour (for topping)
  • 1/2 tsp cinnamon
  • 4 tbsp cold butter (cubed)

Instructions

  1. Preheat your oven to 375°F and grease a 9×9 baking dish.
  2. In a bowl, whisk together cake flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until fluffy. Add egg and vanilla; mix until combined.
  4. Gradually mix in dry ingredients alternating with milk until just combined.
  5. Gently fold in blueberries without crushing them.
  6. Spread batter into the prepared dish.
  7. In a separate bowl, mix sugar, flour, and cinnamon for the topping; add cold butter and mix until crumbly.
  8. Sprinkle the topping over the batter.
  9. Bake for 35-40 minutes until golden brown and a toothpick comes out clean.
  10. Cool for at least 10 minutes before serving.
