Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 pound chicken breast, diced
- 3 cloves garlic, minced
- 10 ounces penne pasta
- 2½ cups low sodium chicken broth
- 1 cup milk
- 8 ounces fresh spinach
- 3 ounces cream cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
Instructions
- In a large skillet or Dutch oven, heat olive oil over medium heat. Sauté the chopped onion until translucent (about 3–4 minutes).
- Add diced chicken, season with salt and pepper, and cook until browned (5–6 minutes). Stir in minced garlic and sauté for another minute.
- Combine uncooked penne pasta, chicken broth, and milk. Bring to a boil, then reduce heat to low, cover, and simmer until pasta is tender (15–20 minutes).
- If there’s excess liquid after cooking the pasta, uncover and cook for an additional 5 minutes.
- Remove from heat and stir in cream cheese until melted. Mix in spinach and both cheeses until fully combined.
- Serve warm and garnish as desired.
