Description
This skillet creamy spicy Cajun steak & cheddar pasta is bold, cheesy, and packed with flavor. Made in one pan, it’s weeknight comfort at its best.
Ingredients
1 lb sirloin steak, cut into strips
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 (10 oz) can diced tomatoes and green chilies, undrained
1 (8 oz) package cream cheese, softened
1 cup heavy cream
1 tbsp Cajun seasoning
1/2 tsp salt
1/4 tsp black pepper
1 lb pasta (penne, rotini, or your choice)
2 cups shredded cheddar cheese
Chopped green onions, for garnish (optional)
Instructions
1. In a large skillet, heat olive oil over medium-high heat. Add steak strips and cook until browned, about 3-5 minutes. Remove and set aside.
2. Add onion and garlic to the skillet and cook until softened, about 3 minutes.
3. Add bell peppers and cook 5 minutes more until tender.
4. Stir in diced tomatoes and green chilies, cream cheese, heavy cream, Cajun seasoning, salt, and pepper. Simmer while stirring until smooth.
5. Add cooked pasta and toss to coat. Stir in steak and 1 1/2 cups cheddar cheese.
6. Sprinkle remaining cheese on top. Cover until melted.
7. Garnish with chopped green onions and serve.
Notes
For extra heat, double the Cajun seasoning or add crushed red pepper. Best enjoyed fresh, but leftovers reheat well with a splash of milk.
