Description

Ingredients

1 lb cooked chicken, shredded or diced

12 oz penne or rotini pasta

2 cups chicken broth

1 cup heavy cream

1/2 cup ranch dressing

12 tbsp chipotle sauce (adjust to taste)

1 cup shredded cheddar cheese

1/2 cup cream cheese

1 tbsp olive oil or butter

1 tsp onion powder

Salt and pepper to taste

Chopped cilantro (optional, for garnish)


Instructions

1. Heat olive oil or butter in a large pot over medium heat. Add shredded chicken and season with onion powder, salt, and pepper. Cook for 2-3 minutes.

2. Add chicken broth, heavy cream, ranch dressing, chipotle sauce, and uncooked pasta. Bring to a boil, then reduce heat to low. Simmer, stirring occasionally, until pasta is cooked (about 10-12 minutes).

3. Stir in cheddar cheese and cream cheese until melted and the sauce is creamy.

4. Serve warm, garnished with chopped cilantro if desired.

Notes

You can adjust chipotle sauce to taste—start with 1 tbsp for mild and increase for more heat.

If using rotisserie chicken, reduce seasoning slightly.

For reheating, add a splash of broth or milk to loosen the sauce.
