  • 1½ cups graham cracker crumbs
  • ½ cup melted butter
  • 2 cups fresh blueberries
  • ¾ cup sugar (divided)
  • 3 packages (8 oz each) cream cheese

  • 3 large eggs
  • ½ cup sour cream
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of the prepared pan.
  3. Cook blueberries, ¾ cup sugar, cornstarch, and lemon juice in a saucepan over medium heat until thickened. Cool.
  4. Beat cream cheese, remaining sugar, and vanilla until smooth. Add eggs one at a time, then stir in sour cream.
  5. Layer half of the cheesecake mixture over the crust, followed by half of the blueberry sauce. Repeat layers.
  6. Create a marbled effect by swirling a knife through the top layer.
  7. Bake for 60-70 minutes until slightly jiggly in the center. Cool before refrigerating for at least 4 hours or overnight.
